Dairy Free Banana Bread
WE'RE BACK with another epic recipe... This time it's a delicious Dairy Free Night Night Banana Bread! 🤤Â
Makes:Â 1 Loaf (8 slices)
Ingredients:Â
2 very ripe bananas
1 1/2 cups almond meal
1/2 cup buckwheat flour
2 tsp baking powder
1 tsp baking soda
3 tbsp @yespleasehealth dairy free hot choc
1/4 cup coconut sugar
1 egg
2 tbsp peanut butter
6 medjool dates, pitted and soaked with 1 cup boiling water for at least 10mins (reserve 1/3 cup of this)
1 block chocolate of choice
Handful flaked almonds
Crack of pink salt
Directions:
- Preheat oven to 175°C and line a loaf tin with baking powder. Blend bananas and soaked dates with date water, peanut butter and egg. Transfer to a mixing bowl.
- Add all remaining ingredients excluding almonds and chocolate and stir well. Once mixed, stir though chocolate and place mixture in the lined tray, sprinkle flaked almonds to cover and bake for 1 hour or until cooked. Enjoy
